Recipe - Pretzel-Coated Chicken Tenders

Sundays have become my night to try new Weight Watchers recipes.  I like to choose something easy because who has time to create an elaborate meal on a day when you're running around and trying to get things done?  Yes, Sunday is a day for rest but I guess we're a little backward that way.  Saturday tends to be our day for fun or rest.  Tonight's dinner consisted of pretzel-coated chicken tenders, scalloped potatoes and a caesar salad.  We enjoyed leftover coconut cream pie and frosted cookies for dessert.  One of my brothers came over for dinner and I hope he enjoyed our casual meal.

PRETZEL-COATED CHICKEN TENDERS

Prep:  5 minutes - Cook:  10 minutes
Other:  10 minutes

A coating of crushed pretzels provides a crisp and crunchy crust for these kid-friendly chicken tenders.


1    pound chicken breast tenders
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2    large egg whites, lightly beaten
2    cups tiny pretzel twists, crushed
Cooking spray
1/4 cup reduced-fat honey mustard

1.  Preheat oven to 450 degrees
2.  Sprinkle chicken evenly with salt and pepper.
3.  Place egg whites in a small bowl.  Place crushed pretzels in a shallow dish.
4.  Dip chicken tenders in egg whites.  Dredge in pretzels, pressing firmly to coat.  Place chicken on a wire rack, and let stand 10 minutes.  Place a jellyroll pan in oven to heat while chicken stands.
5.  Coat chicken tenders well with cooking spray.  Remove hot pan from oven and coat with cooking spray.  Place chicken on pan in a single layer.  Bake at 450 degrees for 10 to 12 minutes or until chicken is done.  Serve with honey mustard.  Yield:  4 servings (serving size:  about 2 tenders and 1 tablespoon honey mustard).

I liked the smoky, nutty flavor the crushed pretzels gave to the chicken.  This recipe was super easy to make and I'll definitely be making it again.  I hope you enjoy it if you give it a try!

This is interesting. I guess pretzels or bread, it's all pretty much the same thing.

I'm fixing fried eggplant and baked potatoes for dinner tonight. Easy as they come! ;)
